Grape variety: Black Grenache 81%, Syrah 19%
Soils:
Sandy and red sandstone
Harvest:
After waiting for the optimum ripeness, the grapes were harvested manually between September 13th and September 28th, 2016
Vinification:
The grapes are de-stemmed and crushed and put into stainless steel tanks for alcoholic fermentation at a constant temperature of 25°C. The maceration process takes approximately 30 days.
Ageing:
Syrah and part of the Grenache are aged for 12 months in old oak barrels.
Tasting:
A robust ruby colour. The nose reveals a subtle blend of strawberry jam and cocoa bean, notes of white pepper follow. In the mouth the attack is fresh thanks to a fine concentration of menthol tannins, which evolves towards graphite.
Food pairing:
Perfect with leg of lamb and creamy potatoes or roasted suckling pig
Ageing potential:
To be drunk straight away or over the next 20 years at 16°C
