Natural sweet wine

Grape variety: Muscat petit grain


Soils:

Plots lie at an altitude of 300m with full southern exposure and optimum protection from disease.

Sustainable cultivation and cultivated biodiversity are practiced.


Harvest:

The fruit is 'just ripe' and so the acidity and berry freshness are 'locked in'

Grape clusters are hand picked from plots chosen each year according to the weather conditions.


Vinification:

The fruits are sent to the wine cellar in 20kg boxes, the stalks are removed and the grapes crushed to produce a 'must' that will undergo pre-fermentation maceration at a low temperature (approx. 13°C) this is then 'blanketed' for 4-6 hours. Only the juice obtained from the first, light pressing will be sent for fermentation. This process allows optimum acidity to develop in the 'must'. The wine is then left for 4 to 8 weeks in stainless steel vats at 10°C to develop flavour. The wine is then left to ferment to obtain a concentration of residual sugar of 110g/litre.


Ageing:

The wine is left to age 'sur lie' for several months before being bottled. This relatively long ageing process defines the elegance of this prestigious cuvee.


Tasting:

Pale gold, very pure colour. The nose is very delicate, with notes of minerals, pear and rose petals. Violet or toffee aromas may also be detected,

The wine tastes refreshing and mineral with a floral bouquet.

Serve between 6-7°C


Food pairing:

Delicious with scallops cooked in brandy, foie gras, chicken and fig tajine and with fruit or chocolate based desserts. Also works well as an aperitif.


Ageing potential:

From 20 - 30 years
