Plots lie at an altitude of 300m with full southern exposure and optimum protection from disease.
Sustainable cultivation and cultivated biodiversity are practiced.
Grape clusters are hand-picked when just ripe. The fruits are sent to the winery in 20kg boxes
On arrival at the winery the stalks are removed and the grapes are crushed to produce a 'must' that then undergoes pre-fermentation maceration at low temperatures for 4-6 hours
The grapes are then pressed and left to settle for 72 hours, after which the wine undergoes a long fermentation process in stainless steel vats for 4 weeks using native yeast. This traditional style of winemaking results in a concentration of residual sugars of 110g/l
The wine is left to age 'sur lies' in stainless steel vats or enamelled concrete tanks.
The wine is bottled two to three years after the harvest.
Colour is golden. The nose is lychee, candied apricot, honey and pineapple
In the mouth the wine is sweet, tangy and delicious
The wine should be served between 6-7°C
Ideal with spicy dishes, raw fish, pan fried foie gras, scallops with leeks. Can also be drunk as a digestive
