Grape clusters are hand-picked from plots chosen according to ripeness and acidity.
After sorting, the clusters are sent to the press where they undergo a process of pre-fermentation maceration at a low temperature and are then blanketed under carbon dioxide for 4-6 hours. This process helps to release the aromas and freshness in the wine.
The 'must' is pressed and continues to undergo pre-fermentation, cold maceration until the alcholic fermentation stage.
The fermentation stage lasts about 2 weeks, at low temperatures, to produce a wine with 10g/l of residual sugar and an alchol content of 13,5%. At the end of the ageing process the wine is gasified with fine bubbles
Bronze colour, the nose is of white flowers. The taste is discrete mineral with a rush of full freshness.
Good as an aperitif or with white fish or chicken
