Plots lie at an altitude of 300m with full southern exposure and optimum protection from disease.
Sustainable cultivation and cultivated biodiversity are practiced.
Grape clusters are hand-picked and then delivered to the wine cellar in 20kg boxes.
Stalks are removed and the fruit is crushed to produce a 'must' that undergoes pre-fermentation, cold maceration at 10-12C over several days. Alcoholic fermentation, using native yeasts, over 10-15 days is followed by post-fermentation maceration which allows for full extraction with the presence of alcohol. Malolactic fermentation completes the winemaking process.
Ageing takes place in stainless steel vats
Colour is ruby red. The nose has notes of candied fruit, strawberry, cherry and fine spices
The taste is intense and rich with notes of cooked fruits and spices to finish
Perfect with rabbit and mustard, roast leg of lamb or with porcini mushrooms
