Traditional wine making method in thermoregulated concrete vats. Partial de-stemming followed by cold pre-fermentation over a few days. Daily pumping over. Fermentation of the skins lasts 28 - 35 days.
Ageing in large oak barrels and demi-muids 12-18 months
A nice red purple colour with shiny reflections. The nose is dominated by aromas of little red berries. Sweeping silky smooth texture once in the mouth
Ideal with meats cooked in a rich sauce such as rabbit or wild boar
