Vines are 10-25 years old. The fruits are hand picked and 100% de-stemmed
Fermentation using wild yeast.
Ageing takes 12 months using a mixture of vats and barrels
A ruby red colour. Pungent aromas of dried fruits and potpourri with spicy overtones. The taste is silky and sweet with vibrant redcurrant and cherry flavours complimented by deeper notes of liquorice, violet and black cardamom. The final notes are gentle tannic, floral pastille and cherry compote.
