Plots are found at high elevation 350m on well exposed slopes. Soils are limestone and marls.
Grapes are hand-picked, 70% of the fruits are de-stemmed followed by crushing and gravity vatting.
The vatting period lasts 32 days and includes 3 phases including: cold pre-fermented maceration, alcoholic fermentation at 28C and long maceration infusion.
12 months ageing in 500/600l capacity oak barrels (Demi-muids), a second ageing in concrete vats over the winter months. Total ageing is 18 months
A deep garnet colour. Aromas of black berries, strawberry, cocoa and violet. In the mouth the taste is structured and racy with a final taste of saltiness
Serve at 16°C. Decant when young. Enjoy with mature Kobe beef and mushrooms
