Grape variety: Grenache, Syrah, Mourvedre, Cinsault
Soils:
Plots are at 350m elevation with a west to north west exposure. Soils are limestone marls and sand.
Harvest:
Grapes are picked by hand with partial de-stemming (70%), crushing and gravity vating.
Vinification:
The vating period lasts 32 days and is carried out in 3 phases: cold pre-fermented maceration, alcoholic fermentation at 28C and long maceration-infusion.
Ageing:
12 months in oak barrels plus a second ageing in concrete vats over the winter months
Tasting:
A deep garnet colour. A full nose of black fruits, strawberry, cocoa and violet. In the mouth the sensation is dense, structured and racy with final subtlesalty notes.
Food pairing:
Pour into a large glass at 16°C, decant if young. Enjoy with beef rib, mashed potato and olive oil.
