Grape variety: Grenache
Vines are found at an average elevation of 350m on limestone marls and sand, with a fresh microclimate and some shade.
Grapes are picked by hand and put into small cool containers of 12kg for transport to the winery.
Grapes are pressed as entire bunches on arrival at the winery and are left over night. Long alcoholic fermentation takes place at 15C
6 months in a concrete tank.
A bright pink salmon colour. The nose is fresh, fruity and juicy. In the mouth the style is large and long balanced by a beautiful acidity with a subtle salty finish.
Pour into a large glass at 11-12°C. Enjoy with fusion food, salmon, bouillabaisse, and Mediterranean fish, garlic based dishes, ratatouille and blue cheese.
