In Provence 'La Fête des Terrasses' starts in July and sees cafés and bars welcoming clients back with a traditional glass of delicious local rosé - the party wine of Provence. For those warm summer evenings we have included a recipe for tapenade, a very simple but traditional Provençal dish, perfect served on toasted bread with a glass of chilled rosé! Nathalie Reynaud is a fifth generation winemaker. Her dynamic enthusiasm for her heirloom comes from a rich understanding of what it takes to produce exceptional wines. The Reynaud family have been wine growers in the southern Rhône since 1880 when they planted their first vines on a piece of land in Châteauneuf-du-Pape called au lieu-dit 'Les Bedines'
In 2012, on realization of the excellent quality of the 'old vines', Nathalie and her parents bought a cellar and l'Abbé Dîne was born. She hired Philippe Cambie, world renowned oenologist, to consult in her cellar. With his experience, Nathalies knowledge and the very old vines from the 'lieu dit' the combination proved to be a wining sucess with wine accolades arriving soon after and continuing today. Her Vin de Pays rosé is of exceptional quality/price. It is a lovely fresh dry wine with notes of ripe fruits of peach and apricot. Ideally served straight from the fridge it makes a great apéritif or to accompany a light meal of chicken or fish. Available as part of our July offer below.

Tapenade is a Provençal dish of chopped olives, capers, anchovies and olive oil + a secret ingedient! Its name comes from the Provençal name for capers: tapenas.
Serve as an hors d'oeuvre on toasted bread sclices with a chilled glass of rosé.
225g pitted olives (green or black)
2 anchovy fillets
1 small garlic clove crushed
2 tablespoons capers
2 tablespoons extra virgin olive oil
+ secret ingredient - splash of cognac
Rinse olives in cool water. Place all ingredients in a food processor and blitz until the mixture becomes a coarse paste.
Transfer to a bowl and serve
